Cruciferous Chicken and Apple Slaw

This Cruciferous Chicken and Apple Slaw dish is a protein-rich, antioxidant-packed recipe that supports digestion, boosts immunity, and promotes heart health with a mix of fibre, vitamins, and protein.

SERVES 1

Ingredients

  • 150–200g chicken breast (alternatively use pan-fried tofu)

  • 1 tbsp pumpkin seeds

  • 1 tbsp sunflower seeds

  • 50g Brussels sprouts or savoy/white cabbage

  • 50g red cabbage

  • 20g kale

  • 1 radish

  • Half a green apple

  • Half a lemon zest and juice

  • 1 tbsp tahini 

  • Salt and pepper to taste

METHOD

  1. Place chicken breast in a pot and cover with water. Bring water to a boil then turn to low and simmer for 8–12 minutes (depending on size of the chicken). Check the chicken is cooked through. Remove from water, let cool and rest for 10 minutes. 

  2. Meanwhile, toast the seeds in a small dry frying pan until golden, set aside. Shred the Brussels sprouts and red cabbage, chop the kale, cut the radish and apple into matchsticks (or grate), zest the lemon and lastly shred the chicken with a fork.

  3. In a bowl mix the shredded chicken, Brussels sprouts, kale, red cabbage, radish, apple and lemon zest together. 

  4. In another small bowl mix the dressing ingredients—lemon juice, tahini, a splash of water, salt and pepper to taste. Pour over the salad and toss to coat the salad. 

Tip: A mandoline is a great tool for slicing vegetables nice and thin.
